Touches of butterscotch mixed with dried flowers, all very open and expressive. The open-knit palate is rounded and honeyed on the entry, and the minerally finish lingers in the mouth. Superb.

This is a superb Right Bank premier cru with notes of wild flowers and honey, leesy intensity, subtle reduction and a dusting of aromatic spices.

Sinds zijn eerste oogst in 2008 maakt Patrick Piuze furore in Chablis. Als voormalig wijnmaker van Domaine Jean-Marc Brocard – een grote producent – kent hij de meeste wijnboeren in het gebied. Met toegang tot de beste kwaliteit chardonnay druiven maakt Piuze fantastische wijnen. 

Montée de Tonnerre geldt als een van de beste Premier Cru wijngaarden met een ligging op het zuidwesten, waardoor de rijping van de chardonnay optimaal is. Slechts een klein ravijn scheidt de ranken van de gereputeerde Blanchot Grand Cru wijngaard. 

Jancis Robinson en Robert Parker's The Wine Advocate prijzen Patricks wijnen de hemel in. Piuze's signatuur is pure finesse met een kenmerkende terroirexpressie (vuursteen) en gelaagdheid in de wijnen. Helaas is de productie zeer beperkt. Uit een versnipperd aanbod van maar liefst 18 wijnen (!) mogen wij sinds 2010 een paar dozen kopen van een Chablis (villages), Premier Cru en Grand Cru. OP = OP!

Proefnotitie

Bijzonder fraai en mineralig van geur. Geweldige vulling en concentratie, met tonen van limoen en grapefruit. Zeer kleinschalige productie, zeer grootse wijn!

Drinken bij

Fraai om te combineren met Sint-Jacobsschelpen en lichte visgerechten.

Houdbaarheid

Heerlijk om nu te drinken, maar te bewaren tot tenminste 10 jaar na de oogst.

It was a pleasure to revisit the 2017 Bourgogne Tonnerre Les Boutots, a pretty wine that reveals a bouquet of fresh peach, white flowers and yellow orchard fruit that has acquired a delicately honeyed top note since I last tasted it. On the palate, it's medium to full-bodied, ample and satiny, with tangy acids and a precise but open-knit, charming profile. While it is drinking well today, there's no hurry to consume it.
